Case di Latomie - the place "where the Nocellara del Belice monoculture was born".
Olive groves stretch along the hills of Sicily's west coast, gently sloping down to the clear sea and the ancient Greek colony of Selinunte, where olives have been cultivated for centuries. Here is the organic farm "Case di Latomie". The owner of the estate is the Centonze family . The farm is located in a place full of history "every step of the way" and extends over a completely fenced area of almost 35 hectares. The enchanting landscape of centuries-old olive and citrus groves is set between the old quarries of "Latomie" and the ancient walls of the "Conigliere" stone enclosure in a typical landscape for long relaxing walks.
Only citrus fruits and olives are grown here, the advantage of which is the ecological cultivation method, i.e. BIO quality . The culture of olives accompanies the history of the inhabitants of Belica. The first settlement of this area is associated with the foundation of Selinunta, the ancient colony of Magna Grecia, which was established in the 7th century BC. Oil cultivation dates back to the 5th century BC, when the "Selinuntuni" cultivated olives and colonized Valle del Belice.
One thing that should be taken for granted - manual cutting and manual harvesting
The cutting is done by hand in a traditional way that is passed down from generation to generation. This allows us to obtain large, fleshy olives that provide high quality oil . The best olives are picked by hand in October and November and pressed into oil in 8 hours per student. The particularity of the land and the climate, the centuries-old trees, our passion and love for their cultivation are the reasons why Centonze olive oils are a real treasure.
Immediately after manual picking, the olives are transported for processing in perforated boxes to ensure maximum quality. They are first cleaned of dust, twigs and leaves, then gently rinsed with cold water and transferred to vibrating grates to remove all remaining impurities.
"Mild" cold pressing with a maximum temperature of up to 27°C
The whole process takes place in three stages :
- Crushing
- felling
- Extraction
Each of these operations must be carried out with great care under the best possible conditions to promote maximum oil quality. In a continuous cycle system, crushing is done by pressing the olives against perforated cylinders, then the olives are sliced evenly, taking care that the temperature never exceeds 27°C. For pressing, the so-called cold pressing system is used, which allows gentle pressing, so again there is no significant increase in temperature.
The goal is to obtain an oil with a very high density, bright green color, herbal aroma and spice and fruity taste. We do not use filtration to extract the oil, which significantly reduces the quality of the oil. Centonze olive oils are among the absolute best performers worldwide and are ranked first in the most demanding evaluations every year.
